Neufchâtel

Our February Cheese of the Month is Neufchâtel, a traditional soft, white, table cheese originating from the village of Neufchâtel-en-Bray in northern Normandy in France. Made from cow’s milk it is one of France’s oldest cheeses, dating back as far as 1035. The cheese is matured for 8-10 weeks, and has a taste and texture that is similar to a Camembert; mushroomy, rich, salty and nutty.

Neufchâtel is made in many shapes and sizes, including the heart shape that we have in at The Hollies. Legends say that French farm girls fell in love with English soldiers during the Hundred Years War and started making heart shaped cheese to show their love.
