Ubriaco al Prosecco
The Hollies’ Cheese of the Month this July is Ubriaco al Prosecco – a Prosecco flavoured cheese!
Ubriaco al Prosecco is made from pasteurised cow’s milk in Veneto, Italy. The cheese is immersed for about two months in Prosecco wine and then aged for about 6 months. The cheese absorbs the flavour of flowers and fruits, such as the golden apple and pears from the Prosecco wine. The result is a hard artisan cheese with a full fruity flavour.
The fresh and elegantly salted cheese is best served crumbled or in thin shavings – and (obviously!), with a glass of Prosecco!
